Leprino, a global leader in the dairy food and ingredient industry, is seeking a Cheese Brine Operator to join our team located in Roswell, NM. Leprino is the world's largest supplier of mozzarella cheese and one of the largest suppliers of premium dairy nutrition ingredients. Our customers and business partners span the globe and include many of the world's largest food companies, restaurant chains and distributors.

 

The Brine Operator operators brine equipment to control cheese temperature, dimensions, and consistency adjusting conveyor speed and chiller temperatures; Maintaining a clean environment and adhering to all the GMP’s, SOP’s, and Critical Control Points pertaining to Food Safety and USDA regulations.

At Leprino, starting compensation for this role typically ranges between $20.32 and $21.78. In addition, a night shift premium of $1.25 per hour is added for hours worked between 6 PM and 6 AM

We Ask of You To:

  • Records cheese temperature, salt, pH, brine, and chlorine and input this information into the computer.
  • Performs filter changes to maintain a safe brine flow through the pipes and secure a safe and high-quality product.  
  • Set parameters at the beginning of the shift to make sure the cheese has the right temperature, brine, salt, and pH levels.
  • Changes pipes and elbows to start the CIP process, making sure all pipes are connected to the right end to avoid product and water mixture.
  • Properly clean and sanitize all equipment as required by company procedures, maintain good housekeeping in area.
  • Maintain Good Manufacturing Practices at all times.
  • Demonstrate good safety behaviors and constantly apply them by following all applicable safety rules and regulations.
  • Communicate as required with Supervisors, Forepersons, other departments, and coworkers.
  • This position is responsible for food safety and food quality.
  • Must have prior experience and be comfortable with computers as this position requires computer adjustments to meet product specifications and parameters.  
  • Must know how to enable the CIP process and mix the right amount of chemicals (very minimal chemical handling) to effectively clean equipment at the end of shift.  
  • This position requires standing, walking and climbing up the ladder (if applicable), lifting and assembling/disassembling pipes.
  • Must be able to input data of pH, salt and chlorine levels into the computer constantly.

Minimum Qualifications:

 

  • Ability to perform essential job functions safely..
  • Must be a minimum of 18 years old.
  • Must be able to work Sunday - Saturday, off-shifts, weekends, holidays, and required overtime to support a 24 hour/7 day operation.
  • Must be able to work a minimum of 8.5 hours.
  • Demonstrated ability to complete work assignments with high degree of accuracy
  • Must be able to perform basic mathematical functions.

Language and Technical Skills

    • Good communication skills
    • Able to read, write, and speak the English language
    • Able to read, write, and perform intermediate mathematical calculations
    • Must be able to maintain accurate records 

Reasoning Ability

    • Good time management skills
    • Ability to work independently without direct supervision
    • Able to interpret data and make necessary decisions

Physical Demands and Work Environment

    • This position will be exposed inside ambient temperatures and may include  a wet / slippery environment with loud noise in varying degrees of temperature
    • Specific vision may be required for this position, including close vision, distance vision, color and depth perception, and the ability to read computer screens for extended time periods
    • Must be able to lift and carry up to 50 pounds
    • Bending, squatting, reaching, and climbing up stairs/ladders are required throughout the shift.
    • Standing and walking are required throughout the shift.
